Шненокле...Schnee Nockerl...Floating Islands

I love this desert during warm summer days! (is it just me, or this first sentence sounds just like 'I like a warm pig belly for my aching feet'). Oh... where was I ... :) ... yes, it is quick and easy to make and it can be paired with your fruit of choice (strawberries, raspberries, blueberries, candied orange, etc). I also like to decorate it with almond slivers. 




Ingredients:  

  • 1 liter of milk
  • 6 eggs
  • 15 Tbsp of sugar
  • vanilla pod
  • 1 vanilla pudding (e.g. Dr. Oetker
  • pinch of salt

Directions:


Bring milk to boil, then scrape-in the insides of the vanilla pod and add 6 Tbsp of sugar. Reduce the stove to medium-high to keep the milk simmering, but not boiling. Separately, beat the egg-whites with 3 Tbsp of sugar and a pinch of salt. Now, form the 'islands' from the egg-whites mixture with the table spoon  and carefully drop them in the simmering milk one by one. Let them cook in the milk for a minute on each side. Take them out with a sieve-spoon and arrange them in a separate bowl on the side.
For yellow cream: mix the egg yolks (you should have 6 of them remaining now) with 6 Tbsp of sugar. Add vanilla pudding and 100ml of water so that it can dissolve with no lumps. Transfer the egg-yolks and vanilla pudding mixture into the milk that is still being kept warm and keep stirring until the yellow cream starts to thicken. At that point, take it off the stove and pour the yellow cream over the white islands. 
Refrigerate for at least 2 hours before serving.
