Moussaka with broccoli


Typically, moussaka=meat+potatoes+eggs. In this healthier version, only replace potatoes with boiled broccoli. 



Ingredients: 

  • 2 eggs
  • 1/2 cup of milk 
  • 250g (~1/2lbs) of ground beef or pork
  • 1 bunch of broccoli (I've used romanesco variety, but works with any)
  • 1 small yellow onion

Directions:


Cut the onion finely and add to the pan which you use for sauteing and which has been preheated with olive oil. Let the onion cook until it starts to be translucent, and then add ground meet with a splash of cold water, to lower the temperature and allow for meat to cook evenly. You can also add carrots at this point, if you like. Cook meat with onions for 10 minutes on medium heat. At the same time, while meet is cooking, cut the broccoli crowns in small cubes and boil them in salted water. Broccoli should be boiled for few minutes, until it just starts to soften. Drain broccoli and add it to the onion and meat. Separately, beet the eggs and add milk and seasoning. Bring egg and milk mixture to the pot with broccoli and meat and mix them all together. You can add more olive oil, if you've used lean meat. Transfer everything into the baking dish and put in the oven for 40 minutes on 380F.
