Peach Galette




It is summer with too many fruit choices. My peach is slowly giving up to a second round of figs and apples. So I decided to make this classic but delicious and simple dessert before we say bye to peaches for this season ;)

Here is the recipe:
Crust:

  • 1 1/4 cup flour
  • 1 1/2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 stick butter cut into small  cubes, chilled in freezer
  • 1/4cup ice cold water
Filling:

  • 1 pound peaches sliced into small slices
  • 3 tbsp sugar
  • pinch of cinnamon
  • pinch of nutmeg

  • 1 egg
In a food processor, pulse flour, sugar, and salt, until well mixed. Add  butter and pulse.  Slowly add the ice water and  pulse until the dough just begins to clump.  Form into a ball and  wrap with plastic and place into refrigerator to chill for one hour.
Place the peach slices in a bowl with  sugar, cinnamon and nutmeg. Toss gently to coat.

On a lightly floured  surface, roll out the dough. Gently lift up the  dough and place it on a baking sheet.
Arrange the peach slices in the center of the dough.Fold the outer edges of the dough over the filling. Use a pastry brush to coat the exposed dough with an egg wash. Bake for 20-25 minutes on 420F.

Note: My peaches were not overly juicy (due to luck of water this season) so I did not need to add any flour or corn starch to my filling but if you feel your peaches are very juicy go ahead and add some starch to the filling.
