Spring rolls with Sauerkraut



This is another spring rolls recipe. I have invented it the other day and really liked it so I decided to share it here on Ma petite kuhinjica.

Ingredients:
1 pack of spring roll wrapper
1 small onion finely chopped
1 cup sauerkraut (try to use one with probiotics from Whole Foods or homemade one)
½ cup carrots (julienned)
¼ low sodium soy sauce
1teaspoon sugar
2 tbspoons lime juice
Pepper
Oil of your choice to fry the rolls (about 2 table spoons)
Scallions to garnish


Preparation:
Sauté the onion until translucent and then add sauerkraut and carrots and sauté until carrots are soft (5-8 minutes more). In a small bowl whisk together soy sauce, sugar, pinch of pepper and lime juice and add it to the carrot and sauerkraut mixture. Sauté for 2 more minutes until the flavors combine and let the mixture cool enough to be able to handle it with your hands.
In a large pan boil some water to use to soften spring roll wrappers.
Add 1-2 tbspoons (depending on the size of your wrappers) of the mixture to each wrapper and roll it into a roll. Fry the rolls on each side for a few minutes until golden. Drain the excess fat after frying on a paper towel and sprinkle with thinly sliced scallions.
I serve this to make a complete meal (but it can also make a great appetizer) with green beans (you can find the recipe I used here: http://www.foodnetwork.com/recipes/neelys/green-beans-with-lemon-and-garlic-recipe/index.html) and boiled baby potato salad dressed in just olive oil and paprika –no salt since you already have plenty from sauerkraut and soy sauce  .
