Pie with sauerkraut

I love March. It is when Spring begins, it is a month during which many of my dearest friends have birthdays, it also symbolizes a new beginnig for me when I came to USA in March many many years ago... It was March when I moved to NY, also March when I came back to CA, ... In other words, there are plenty of reasons to celebrate during March, so why not celebrate Pi Day as well !? :)
This is the pie that I've made to mark the occasion. 

My friend Svetlana inspired this post with sauerkraut recipes she shared here on our blog recently. That is how I've decided to make the pie with sauerkraut using my mom's recipe. It is much easier than I've thought it would be! Try it! 










Ingredients: 

  • 2 cups of finely cut sauerkraut
  • 1 cup of greek yoghurt
  • 1 cup of diced leek
  • few slices of bacon 
  • phyllo dough

Directions:

Cut the bacon in pieces and start browning them in the pan. When bacon starts to become crispy, add the diced leek and continue to sautee until leek becomes transparent (just like onions). Add the souerkraut and cook for few minutes all together to incorporate the flavors.

Take two sheets of phyllo dough and sprinke with olive oil. Cover with another sheet and spread 1Tbsp of greek yoghurt (as shown in the photo above). Spread the mixture of souerkraut and then roll the dough. Place on the baking pan that you have previously greased and repeat the process. 
Take few tea spoons of warm water and add few drops of olive oil. Sprinkle over the top of the rolls, especially over the edges. I also love to sprinke over some sesame seeds.
Let the rolls rest for 10-15min. During this time, preheat the oven to 360F. 

Cover the pie with aluminum foil and bake for 30min. Remove the foil and bake for another 10-15min or until golden.

  1. Thank you Milena for the recipe. Oh do I love it: pie and sauerkraut in one :) I have just used the last pickled head of cabbage the other day. So this one will definitely be on the menu in the next batch of sauerkraut. Happy March! it is one of the two favorite months for me ;) Not only because my birthday is in March but also for other reasons. Here is to it!
